What are the cons of setting up with hands in ulner deviation and left wrist slightly bowed towards target (or at least enough towards target to re-square the face since UD closes it) similar to Bryson‘s setup? In other words more like the impact position.

All I can suggest is that you experiment with it. Ulnar deviation at setup - where the butt of the club points more towards the top of the zipper or perhaps even the belt buckle - is one of the prescriptions for hitting a draw in Stack and Tilt. That, in addition to the bowed lead wrist, may help you to feel and maintain the "flying wedge" - the angle formed by the trail forearm and club shaft - that we establish at address and try to maintain for the duration of the swing.
Just be aware of a few things, including:
1) This type of setup will tend to close the face.
2) Depending on your existing lie angles this may set the club in a very toe-down position and potentially impact the cleanliness of the strike and the club-turf interaction.
3) This setup will affect your ability to create depth in your swing, as it does not promote as much of the hands-in path that we seek in order to access the power source of angular momentum.
