Any advice for a 7'0" tall, 60-year-old, beginner golfer learning the stack and tilt sytem. Clubs are 6" over standard length.

6" over length clubs sound extreme to me I am 6'2" and play standard length. You should do a wrist to floor measurement to get the correct length.
