Hi Tom,
I'm working on chipping method #1 by standing closer with the ball on the toe of the club face and it's working however I'm finding myself so paranoid about hitting it off the edge of the club (since the ball is out on the toe), I can't focus on taking a divot and the fundamentals. Any thoughts?

yes the key is the swing path - if you're not neutral and come from the inside, you're going to hit it off the end of the club sideways. Like you said as well, you don't want to be overcautious and swing from the outside to ensure you're not going to hit it sideways either.
One of the goals of that chipping method is to minimize ground contact anyway. It's a really great strategy for into the grain chips and wet lies. Focus on having a neutral path (don't go outside) and you'll find your rarely miss with this approach.
I just came back from the practice area. A friend asked for help on chipping. I told him about Ray Floyd would get as close to the ball as he could, heal up, toe down. He was doing well after a couple of dozen balls.

Seriously, the first and foremost thing that is going eliminate - or at least drastically reduce - this feeling is proper practice and repetition. That will breed the confidence you need to take it to the course. Beyond that, this chapter on Fixing Common Chipping Problems includes content specific to what you are experiencing.
