Since you have a two way miss going on, I would start with a good look at your grip and make sure it is secure and not allowing any twist of the grip during your swing. Then review the 2.8 drill and make sure you aren’t rolling the forearms in the backswing and downswing. Tom has a couple of videos about quiet hands that may help you.
one other thought, based on my experience, I find my impact consistency suffers when I try to get more distance on a shot. So, evaluate when your poor shots occur. Were you in between clubs and tried to stretch the 8 iron five yards? I find I get a better strike by swinging the 7 iron at 80 % or choking up a finger or two and making a smooth swing with little effort.
It can be a factor of grip, clubface manipulations - conscious or not - made during the swing motion, a shifting of the low point back or forward during the swing, a downswing path that is steep or coming across the ball, or some combination thereof. There are plenty of lessons and drills in the school designed to get you to a solid impact position.
